Our dishes are cooked with a great deal of time and care, with less oil to reduce the calories,
and without processed foods so that you can eat more vegetables,
and they will help you feel better and healthier.
Dried tomato and ground
white sesame rice seasoning
The rice seasoning for our brown rice is made with dried tomatoes and ground white sesame seeds. At WASUGAZEN, we meticulously and finely chop dried tomatoes and other ingredients. This rice seasoning is rich in umami of the tomatoes.
We grind sesame seeds to help with its absorption into the body. Sometimes we add green leaves that are usually left-over leaves of the radish we use for our house dressing. By finely chopping radish leaves that are often hard and grassy and by carefully frying them in a frying pan to dry them, we enjoy everything without any waste. In addition to adding depth to the flavor, the concept of “WHOLE FOOD” makes this an eco-friendly dish that promotes eating the whole part of the food without any waste.
The soup of the set meal
The delicate-flavored soup that comes with our set meal uses slightly different ingredients every day. The reason is that this soup is also made with scraps of vegetables from preparing other dishes, tomato seeds, and celery leaves. These ingredients are added with the concept of “WHOLE FOOD” and many ingredients are mixed to create a mild and gentle taste. It is a great way to use up all the vegetables in a balanced way, and it is good for you and the planet.
Delicious “fries” that are not deep-fried
At WASUGAZEN, we do not have deep-fried dishes on our menu. Croquettes, fries, and pork cutlets on our menu are all baked in the oven, not deep-fried in oil. That is, they are “non-fried.” And yet they have a beautiful color that looks appetizing as if they were deep-fried. This is done by adding an extra step to the breadcrumbs before coating the ingredients so that the outcome will be crispy (and will taste good) without deep-frying. This takes a lot of time, but it is an important step in keeping the calories down as much as possible.
Our special tomato sauce
Everyone loves a tomato sauce that is full of flavor and bright to the eye with its red color. At WASUGAZEN we have many dishes that use tomato sauce. This tomato sauce also takes a lot of time and effort. Our basic tomato sauce includes not only onions but also carrots to add natural sweetness and a good nutritional balance. The vegetables are slowly and deliberately cooked to condense their flavors and tastes.
House tartar sauce made
without mayonnaise
At WASUGAZEN we do not use oil-rich mayonnaise in our tartar sauce. Instead, we make our own tartar sauce with yogurt that we strain overnight. Then we mix in a lot of chopped vegetables and herbs. The sauce does not keep very long, so we make it by hand every time. This is a non-oil tartar sauce that is light and refreshing.
Adding tofu and mushroom to make it healthy
At WASUGAZEN, we use not only meat but also finely chopped tofu, mushrooms, and walnuts in our hamburger steaks, meatballs, and chicken soboro (seasoned ground chicken). Therefore, preparation is more time-consuming and labor-intensive than using ground meat as it is. We boil tofu once and cool it to strain the water before using it, and finely chop mushrooms and walnuts. Our food will be healthier and lower in calories. Mushrooms are rich in flavor and deepen the taste, while mineral-rich walnuts provide a texture and are a good source of omega-3, an essential fatty acid that we should be actively incorporating into the diet to prevent lifestyle-related diseases.
